GOLDBERG National Columnist Change, sudden and relentless, is sweeping the kosher food industry, as it sweeps every other sector of the new economy. Exploding sales are drawing evergrowing numbers of firms to seek kosher certification.

Many come away winners. Others lose out. One of the storied winners is Nabisco, whose Oreo cookies were certified kosher last year. New Yorkarea sales have since grown 160 percent, says Nabisco ethnic marketing manager Charlie Harris. Now Mars, the candy maker, is aiming for the same magic.
