A mix of consumer eating and environmental concerns are having a dramatic effect on supermarket meat and deli merchandising.
With a myriad of customers from a cross-section of purchasing segments--including health-conscious baby boomers, time-starved moms and socially aware shoppers--seeking foods that meet their specific specific dietary and lifestyle needs, major retailers are aggressively marketing new offerings.
Indeed, national and organic proteins, locally developed items and value-added meats are becoming increasingly prevalent as operators work to keep pace with evolving market trends.
More retailers, meanwhile, also are attempting to differentiate such selections by rolling out private-label brands.
