What attribute is the most important when selecting a cheese item? Apparently, it's the variety or flavor of the cheese, indicates Dairy Management Inc. (DMI), in its Dairy Educational Series, prepared by Willard Bishop consulting Ltd. in 2000. DMI offered this educational series, in part, as a tool for retailers to maximize sales and profits.

DMI went on to reveal that cheeses such as domestic Asiago, Pepper Jack and fresh grated Parmesan were becoming staple ingredients in many restaurant dishes, and as a result consumers were searching for those same cheeses in products at the retail level.
