Supechef jean-Georges Vongerichten, of Jean Georges, Jojo, Vong and so many others, is known as the man who fueled Franco-Asian fusion. But with this month's opening of 66, the merry trickster of multi-culti cuisine has turned traditionalist, The Tribeca spot will serve classic Chinese fare with a haute spin, from Peking duck to drunken shrimp.

While the chaos and kitsch of New York's Chinatown is only a few blocks away, the elegant, industrial zen of 66, the first restaurant 'designed by architect Richard Meier, evokes a very different vision of the East. Red flags printed with Chinese ideograms pepper the serene gray space; delicate mesh screens separate the lounge from the dining area and glowing fish tanks holding fresher-than-fresh lobsters and eels offer...
