GUITTARD CHOCOLATE Co. debuts cocoa butter-free bittersweet eating chocolate that the company says is designed to appeal to true chocolate aficionados. Joining the E.Guittard line are 0.03- and two-ounce bars of Quetzalcoatl 72% Cacao Mass Bittersweet Chocolate with SRPs of 75 cents and $2.89, respectively.
The bars are described as "very dark, high intensity bittersweet" chocolates that capitalize on current consumer trends toward bold flavors. In terms of flavor strength, Guittard says the intensity of the 72 percent cacao mass is technically closer to an 82 percent chocolate, has more body than other E.Guittard items and requires special processing for a smooth mouth feel.
