Despite a proliferation of variations on sandwich themes, best-selling sandwiches continue to be originals-the ones that made their makers famous in the first place.

At segment leader Arby's, for instance, roast beef sandwiches top the sales list, even though the chain added more chicken and specialty sandwiches in the past year. Subway's mainstay remains the B.M.T. (bigger, meatier, tastier) classic cold-cut submarine sandwich. Rax, whose menu manipulations have included a hot food bar and chicken sandwiches, still moves more roast beef than anything. And Schlotzsky's The Original still anchors that chain's sales.
