Mushrooms beat wheat germ to top antioxidant slot.

Dec 19, 2005 (Grocers' Review (NZ) - ABIX via COMTEX) -- New research from Pennsylvania State University in the US indicates that button mushrooms contain a large amount of the antioxidant, ergothioneine. According to the researchers, white button mushrooms contain about 12 times more ergothioneine than wheat germ. Levels of the substance, which provides cellular protection within the human body, are even higher in the portabella and

crimini mushroom varieties. Cooking the mushrooms does not decrease the levels of antioxidants present.
