Tesco's new salad potato

A new variety of salad potato will go on sale in Tesco stores this weekend.

Sofia are small to medium-sized potatoes, with lemon-coloured flesh. They have a waxy texture and are unusually soft to the bite, according to producer Greenvale AP.

The new potatotes, which were bred by Agrico Research from parent varieties not previously released to the market, will be stocked in 1kg bags in Tesco's Finest range. "This [soft] bite, coupled with a hint of sweetness, gives Sofia potatoes their delicious flavour and makes them ideal for all salads and fish dishes," said Greenvale technical director Paul Coleman.
