The Palm wants hands of time to fly at lunch.(Special Report)

The next time you're having a business lunch at The Palm in Troy and look down at your watch and realize you're going to make it out in record time, send a note of thanks to the restaurant's new general manager, Curt Schaber. Schaber took over for Tom Brewer this month when Brewer got an offer he couldn't refuse: to manage the food service at a country club in his native Philadelphia.
Schaber got together with the newly appointed executive chef, Troy Howser, to look at improvements they could make. Foremost was speeding up the service for the business lunch.
