Sep. 22--What is a Vidalia onion?

Vidalia onions can actually be one of several varieties of onion plant. The most popular is called a Granex onion. It has the familiar flat shape typical of Vidalias.

The name "Vidalia" can be applied only to onions grown in a 20-county region of southeast Georgia. The name is property of the Georgia Department of Agriculture. By authority of a federal marketing order, no other region of the country may market onions using the name "Vidalia."

What gives a Vidalia onion its unique taste is the soil it's grown in. The amount of sunlight, heat and water Vidalia gets during the winter growing season, combined with sandy soil that doesn't hold sulfur, creates the mild sweetness of the best Vidalia onions. The...
