Coppell, Texas-Based Minyard Food Stores Fills Niche as Produce Wholesaler.

Sep. 8--Coppell-based Minyard Food Stores, launched by postman A.W. "Eck" Minyard to provide Depression-era jobs for two younger brothers, isn't scrambling to add to its 73 supermarkets in North Texas' frenzied and crowded grocery market.

Instead, the family-owned, 71-year-old retail chain has taken the highly unorthodox step of venturing into wholesale produce distribution.

Last month, it quietly began offering deliveries of fruit, vegetables and deli items to rivals after the collapse of Lewisville-based Fleming Cos., once the nation's largest food distributor. Fleming's Garland-based division was purchased by Grocers Supply Co. of Houston late...
