While turkey's role as the perennial Thanksgiving dinner might be everlasting, its position as one of the most popular deli meats also is taking shape. And that is triggering the merchandising of additional flavors and varieties.

Indeed, retailers are offering an expanding array of turkey products--ranging from Cajun, cracked pepper, and peppercorn, to turkey ham and turkey pastrami--to further ignite the already hot category. In addition to the traditional sandwich, turkey also is increasingly being served in wraps, tortillas, and paninis.
