Inspired by the runaway success of yogurt, cottage cheese makers such as KRAFT FOODS INC., Northfield, IL, and DEAN FOODS CO., Dallas, are seeking to renew interest in their products by capitalizing on the same health benefits, such as pre- and probiotic dietary fiber that aids in digestion, reported Dairy Field (November). Dean is especially interested in touting these benefits to schools, which are increasingly cutting back on unhealthy foods.
