Food Institute Report, The, December, 2007

A report on the issues impacting the development of risk-based inspection at meat and poultry processing facilities implemented back in 2004 was released last week by USDA's Office of the Inspector General (OIG). Under the program, more inspection resources were to be placed at processing establishments that posed a greater food safety risk.

In its review, the OIG found USDA's Food Safety & Inspection Service (FSIS) planned to begin implementation of risk-based inspection before completing an assessment of, and determining the data needed for a comprehensive risk determination at processing establishments.
