Richard Downs, with whom I have worked for more than 20 years. He has always provided room for us to work as we see fit and push the boundaries, while having a firm understanding of the bigger picture and stopping us from going too far.

Favourite tipple or wine?

It depends on the circumstances. A good bitter, such as Flowers Original, to quench the thirst, a ChAteauneuf-du-Pape with a special meal and Caipirinhas when partying.
