After opening the island's first Long John Silver's (LJS) restaurant in early February in the San Patricio-Caparra sector of Guaynabo, Encanto Restaurants is finding that Puerto Rico's passion for fried fish and shellfish is as deep as the sea itself, said Chief Operating Officer Jorge Berlingeri, reports Caribbean Business (March 30, 2007).

The fast-food franchisee will invest US$13 million to add five more LJS restaurants by the end of the year, and do upgrades at several of its Kentucky Fried Chicken, Taco Bello, and Pizza Hut eateries here. Encanto is the island's fourth largest employer, with 4,800 workers.
