Three new products are propelling further the already fast-growing market for indulgent ingredients. One is cookie dough, which has made a stir in the ice cream industry. Bits and pieces of this upscale ingredient are used to make chocolate chip cookie dough ice cream, which remains the top flavor at Ben & Jerry's Homemade. Crushed biscotti bits are covered with Belgian chocolate to make the La Tempesta Biscotti Cookie Bar, which received tremendous response at the 1994 Fancy Food Show. The pistachio's attractive color, fine texture and buttery flavor is seen to enhance confectionery, dairy and baked goods products.
