Foodservice product development is rapidly catching up with the higher-profile retail R&D. New product development in the retail food sector tends to be taken more seriously because it entails higher costs and is more methodological. In contrast, foodservice R&D requires less investment, involves shorter development cycles and has greater flexibility.
