Choco-licious

American Fitness,  Jan-Feb, 2005

Is there any other day more associated with chocolate than Valentine's Day? Probably not.

While Christmas has candy canes and gingerbread houses, Valentine's Day is for chocolate hearts and chocolate kisses.

One good place to celebrate lovers' passions is at the Saturday afternoon all-you-can-eat dessert buffet at the Chocolate Bar in Boston's Langham Hotel's Cafe Fleuri. The unique desserts are as visually appealing as they are delicious.

And for the first time in the Chocolate Bar's 16th season, low-carb and sugar-free desserts made with Splenda, such as Chocolate Pudding Cake and Mocha Ricotta Cheesecake, are on the menu.

Here's one scrumptious recipe:

Sugar-Free Chocolate Pudding Cake

By Chef John Quinn Chocolate Bar at Cafe Fleuri

10 oz sugar-free dark chocolate
1 1/2 cups butter
1 pinch salt
1 cup Splenda
5 oz pastry flour
1 pinch cornstarch
6 eggs
6 egg yolks

Procedure:

Chop chocolate into small
pieces and place in a 4-qt mixing
bowl. Sift Splenda, cornstarch and
flour together.

Melt butter in saucepan, pour
over chocolate and stir until melted.

Place in mixer with a paddle and
add flour on first speed until
incorporated. Add eggs and egg
yolks slowly.

Spray 4-oz molds with pan spray,
fill 3/4 full and refrigerate until
ready to use.

Bake at 400[degrees]F for nine minutes.

Serve with whipped cream (substitute
sugar with Splenda). Enjoy.

Visit the care at 250 Franklin Street, Boston, MA 02110, telephone (617) 451-1900, ext. 7125. Price of admittance is $26.00 for adults and $16 for children under 12.

If the Chocolate Bar is out of the question, take a chocolate bar home with you instead.

Start Valentine's Day morning with an Innercalm IN-Fused Chocolate bar ($4.99). This yummy organic, dark, Dutch chocolate is infused with L-theanine, an amino acid that, according to the makers, is calming, refreshing and reviving at the same time.

Organic essential oils of lavender, mandarin, grapefruit, chamomile, bitter orange and sandalwood have been married with chocolate to enhance flavor and infuse aroma-therapeutic benefits.

"You'll love the taste," state the makers.
