Celebrating with apples

Cinco de Mayo will be here before you know it. Why not celebrate with the following low-fat, apple-based recipes?

Apple Sangria Slush

1 cup applesauce (or a mixed fruit sauce, such as apples and peaches)
1/4 cup frozen orange juice concentrate
Juice of 1 lemon
Honey (optional)
1 1/2 cups dry red wine

Mix ingredients and freeze for two hours. Remove from freezer, stir
and serve in goblets with a mint sprig and orange wedge.

Makes 8 servings.
Approximate Nutritional Analysis (per serving): calories 30, protein
0g, carbohydrates 7g, dietary fiber 0g, fat 0g, cholesterol 0mg,
sodium 4mg, 0% calories from fat.

Grilled Chicken
with Crunchy Apple Salsa

Salsa

2 cups apples, halved, cored and chopped
3/4 cup (1 large) Anaheim chili pepper, seeded and chopped
1/2 cup chopped onion
1/4 cup lime juice
Salt and pepper to taste

Combine salsa ingredients and mix well. Allow flavors
to blend for about half an hour. Makes 3 cups.

Marinade

1/4 cup dry white wine
1/4 cup apple juice
1/2 teaspoon grated lime peel
1/2 teaspoon salt
Dash of pepper

4 medium boneless, skinless chicken breasts

Combine marinade ingredients and pour over chicken
breasts. Marinate for 20 to 30 minutes and drain. Grill
chicken over medium-hot coals, turning once, until it
tests done. Serve salsa over or alongside grilled chicken.

Makes 4 servings.

214, protein 41g, carbohydrates 20g, dietary fiber 2g,

from fat.
