MAN-MADE MEAL

GOAL: Fat-burning

WHEN TO EAT IT: Lunch or dinner, or anytime during a fat-burning phase.

INGREDIENTS:

(Serves 6)

* 1/2 cup Dijon mustard

* 1/4 cup low-fat mayonnaise

* 1 Tbsp. chopped fresh tarragon

* 1 Tbsp. packed golden brown sugar

* 2 lbs. trimmed boneless pork loin, cut crosswise into 1/2-inch slices

* Nonstick cooking spray

HOW TO MAKE IT: Coat the grill rack of a barbecue with nonstick cooking spray and heat with medium-high flames. Whisk mustard, mayonnaise, tarragon and brown sugar together in a medium bowl, and brush sauce generously on both sides of pork cutlets. Grill pork until it's just cooked through--don't overcook--and is firm to the touch, 2-3 minutes per side.

NUTRITION FACTS (per serving): 352 calories, 43 g protein, 4 g carbs, 14g fat

SIDE DISH: For added fiber to aid fat-burning, serve with steamed broccoli or other vegetables.
