In large deep skillet, heat oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes. Add tomatoes and cook, stirring to break up with back of spoon. Bring mixture to a boil. When sauce boils, reduce heat. Stir in oregano and simmer 30 to 45 minutes. Just before serving, stir in fresh basil and salt and pepper to taste.

Summer Tomato Sauce

MAKES 6 CUPS DAIRY-FREE (30)

This fresh sauce is delicious served over any short pasta shape. "If you mix it all together at 3 p.m., it's ready to put on the pasta at 7 p. m.," says Nell.

2 1/2 lbs. ripe tomatoes
1/2 to 1 cup minced fresh basil
1/4 cup olive oil, more if desired
1 to 3 medium cloves garlic, minced
Salt and freshly ground black pepper

Coarsely chop tomatoes (you should have about 6 cups) and reserve juice. Place tomatoes and juice in a large non-metallic bowl. Stir in remaining ingredients and set aside at room temperature so flavors can develop.
