OK, so chowing down on a bunch of spinach won't give you bulging Popeye muscles, but it will give you a jump start on your daily allowance of many vital nutrients. Fresh spinach is rich in beta-carotene and lutein, two important antioxidants that help maintain eye health and prevent certain cancers.

And although it's missing the amino acid methionine, when combined with grains, spinach is a great protein source for vegetarians.
