Cutting-edge cuisine: a medley of delicious meals from the future chefs of America

Vegetarian Times, June, 2002

The Culinary Nutrition program at Rhode Island-based Johnson & Wales University is the first and only one of its kind in the country to receive developmental accreditation from the American Dietetic Association. Not only does this inventive program offer students a combination of formal classes and challenging laboratories that offer in-depth focus on nutrition and food science, but also an exciting foundation from which to learn. Students from the Culinary Archives and Museum have participated on food research for movies such as Age of Innocence, Amistad and Beloved. In addition, two Johnson & Wales alumni were part of the American Culinary Federation Team 2000 that brought home four gold medals, a silver medal and a grand champion award in the International Culinary Olympics.

Venture into Cutting-edge Cuisine for an entire menu of appetizing and palate-pleasing recipes. For more information on Johnson & Wales University, please contact Suzanne Vieira, program director, at 401.598.1881.
