Whenever I crave a treat during Passover, I open up A Treasury of Jewish Holiday Baking by Marcy Goldman. In addition to being a Julia Child Cookbook Award nominee and a great year-round resource, this book offers a comprehensive collection of fabulous recipes for Passover, including Apple Rhubarb Cobbler, Extraordinary Macaroon Fudge Bars, Chocolate Spice Cake and Double Chocolate Biscotti. I would buy the book for one recipe alone: Marcy's Caramel Matzo Crunch.
