Raving about raw - letters - Letter to the Editor

I appreciated seeing the article "In the Raw" in the January 2003 issue. Being interested in the raw food diet for almost three years, it was nice to see that VT is staying on top of the latest trends in the vegetarian diet.
In the Chicago area, there is a raw food restaurant called Karyn's--one of the city's first raw food restaurants. And the interest is growing: Raw food restaurants are also popping up in Atlanta, New York City and California. Also, there are many groups around the country that offer raw potluck dinners, including one I attend in the Chicago suburbs.
I would encourage more articles on raw food chefs, restaurants and, of course, raw food recipes--you have one guaranteed reader!
