Matt Amsden learned his raw-foods craft from raw-food guru Juliano Brotman, who recently opened Juliano's Raw in Santa Monica (www.julianosraw.com., 310-587-1552). Alec Baldwin, Bill Cosby and Demi Moore frequent the restaurant for tacos, sushi and "rawvioli" along with comfort dishes such as an all-raw "cheeze-burger" made from mushrooms and nuts on a sprouted buckwheat bun and served with "cheddar cheeze;' pickles, tomato, onion, macadamia mayo, tomato-date ketchup and homemade mustard.

For dessert, I love the Strawberry Mousse Torte made with organic strawberries.
