The popularity of tofu has never been greater, with US sales more than doubling from $108 million in 1992 to $243 million in 2001. Projected sales for 2004 are expected to climb to $273 million, according to market data collected by Vitasoy USA Inc., which makes tofu, soymilk and pasta. Almost all Americans--97 percent--are now aware of soy foods, 74 percent know soy is healthful and 42 percent consume soy food items at least once a month.
And many Americans are eating soy and don't even know it, evidently. That's because many women buy it for themselves and then put it into their families' meals without telling anyone. Sneaky--but smart!
