4. Place acorn squash halves onto baking sheet. Bake until soft, about 15 minutes. Remove from oven, peel and cut into bite-sized pieces. Set aside.
5. Heat large skillet over medium heat, and add olive oil. Saute red bell peppers until soft, about 5 minutes. Add mushrooms, salt and black pepper, and saute 2 minutes. Toss in chopped cilantro. Add reserved pasta, acorn squash and Peanut Ginger Sauce. Heat 3 minutes, remove from heat and serve. Garnish with sliced scallions.

Garlic Bread with Parmesan Herb Butter

1/4 cup unsalted butter, at room temperature 1/4 cup grated Parmesan cheese 1/4 cup chopped Italian parsley 2 whole garlic cloves, minced 1/2 tsp. Rani White Pepper 8 slices Pacific Bakery Bread, sliced
1. Preheat oven to 50OF.
2. Mix butter, cheese, parsley, garlic and pepper in bowl, and blend well. Spread butter mixture evenly over cut sides of bread. Bake until topping is golden brown and bread is heated through, about 5 minutes.
Curried Garbanzo Spinach Stew
This recipe showcases ingredients from Eden Foods, compliments of the company's chefs. It's great served over cooked basmati rice or Eden Organic Quinoa. Serves 4
14 1/2 oz. Eden Organic Diced Tomatoes with Green Chilies, undrained 15 oz. Eden Organic Garbanzo Beans, undrained 1 clove garlic, minced 2 tsp. mild curry powder 1/3 cup unsweetened dried coconut 1/2 tsp. Eden Sea Salt, or to taste 10 oz. spinach, chopped 2 Tbs. fresh parsley, minced, for garnish
1. Combine all ingredients except spinach and parsley in large saucepan. Cover, bring to a boil over medium heat and cook 5 minutes. Add spinach, reduce heat to low and cook 2 to 3 minutes, just until spinach turns bright green.
2. Garnish with parsley, and serve.
