Handle with care

Vegetarian Times, July-August, 2004 by Jonathan St. Thomas

I liked the March 2004 "Lifestyle" story, "The Low-Carb Vegetarian," but there is one problem. Ever since frozen vegetables came on the market in the 1950s, many people have known only one way of cooking vegetables: boiling them. The result is that many of us grew up hating vegetables. That's one of the main reasons people are having problems with low-carb diets. The good news is that VT has been spreading the word that there are other ways of cooking vegetables.
