> * Ruby Tuesday for printing nutritional information about every item on the menus of its 700 restaurants--the first national chain to do so. The new menus, which list calories, grams of total fat, carbohydrates and dietary fiber, appeared in April. The chain has also elected to use trans-fat-free cooking oil, "making it stand head and shoulders above its competitors when it comes to nutrition," the Center for Science in the Public Interest reports.
