Making the grade

You've probably noticed that some canned vegetables look and taste better than others. To help shoppers know what they're getting, the US Department of Agriculture assigns the contents of each can a grade based on a bunch of criteria: color, flavor, texture, smell and how pretty they are (but not how nutritious; all of these veggies are good for you). Learn what the grades and descriptions (like "fancy") mean, then choose when to spend or save--the best of the bunch always costs more.
* Fancy (grade A): The most succulent, tender and colorful--and the easiest on the eyes. Great for guests.
* Extra Standard (grade B): May be a bit blemished or oddly shaped. Think casseroles and salads for these.
* Standard (grade C): Decent quality but imperfect color and flavor. More mature too. Save 'em for soups and stews.
