Karen Davis is the founder and president of United Poultry Concerns, a non-profit education organization opposed to the use of poultry in food production, science, education and entertainment. Her book is a nice collection of more than 100 recipes without an egg in sight. Most of the recipes have a poultry theme, such as Turkey-Lurkey's Teriyaki Tofu, Lemon "Chicken" and Ma Po Chofu. There also are many good stuffings, none meant to go into a bird, and plenty of recipes like Tanzanian Eggplant Curry, that have no obvious relevance to the poultryless theme.

Proceeds from this book support Davis' work.
