Better School Lunches

Cooking with Kids is a public school program that teaches Santa Fe schoolchildren to cook and eat healthful vegetarian foods. Supporters include the Santa Fe Public Schools, private sponsors and Chefs Collaborative 2000, an organization affiliated with Oldways, an international food and nutrition coalition. Last year, some Santa Fe schoolchildren cooked Llapingachos (an Ecuadoran potato dish); Green and White Pasta with Tomato Basil Sauce; Brazilian Black Beans with Calabacitas and Blue Cornbread; North African Tajine; and Mediterranean Salad with Tabbouleh. After the children cooked a meal in the classroom, it was offered on the school's regular menu. Cooking with Kids hopes to expand throughout the state and to become a model for other communities. Eggless Baking

Thinking of making your own bread in large quantities, without using any milk or eggs? You may need help. In the latest issue of the Vegetarian Journal's Foodservice Update, a quarterly newsletter published by the Vegetarian Resource Group, chef Rachel Himmelheber gives tips on great vegan baking. Recipes include basic French bread to make 12 loaves, plus variations of whole wheat, cracked wheat, cinnamon raisin, rosemary onion and granola breads. School Tool

The Fund for Animals has released a 30-minute video for classrooms called What's Wrong with Hunting. It features celebrities such as Coach Marv Levy of the Buffalo Bills, Alexandra Paul of "Baywatch," Tiffani-Amber Thiessen of "Beverly Hills 90210," Craig Paquette of the Kansas City Royals and wildlife biologists and animal activists debunking the myth that hunting is a fun sport or useful for wildlife "management." The video was made to be a counterattack to the pro-hunting messages distributed to schools by rifle and hunting organizations and state and federal wildlife agencies. A report published by the fund last year found that 31 states sponsored hunts and recruited youths to take part in them and 37 states sanctioned hunter training as part of junior high and high school curricula.
