Oh boy, soy! - Lifelines - soyfoods evaluated by children in school lunch programs

Vibrant Life, Nov-Dec, 2001

Some 3,000 schoolchildren recently dined on lunches that substituted soy protein for meat in such kid-friendly foods as tacos, chili cheese nachos, hot dogs, chicken sandwiches, and submarine sandwiches. Sixty-seven percent of the youngsters in the pilot project rated soy-enhanced foods above average in taste. Even better, 65 percent of the students ate all the soy-enhanced foods they were served. And three of four said they would eat the entree again.
