A truly satisfying vegetarian meal: Candle Cafe, New York City
Kelly Marages"I don't have much time to cook, so I often either order in or go out. Luckily, on an excursion with a vegetarian friend, I ended up at Manhattan's Candle Cafe (1307 Third Ave., candlecafe.com), a vegan restaurant that focuses on fresh, local ingredients and creative dishes. Chef Jorge Pineda's Paradise Casserole caught my eye: With one layer each of millet, black beans, and sweet potatoes, the meal is not only hearty enough to satisfy an omnivore with a healthy appetite, like me, but also rich enough to feel totally decadent, even though it's not. Now that I have the recipe, I can make it on weekends and simply reheat after a long day at the office."--KELLY MARAGES, SENIOR ASSOCIATE EDITOR
