Cheers, Nov-Dec, 2002
Next summer, there will be a new home for professional wine studies at the Culinary Institute of America at Greystone in California. To be called the Rudd Center for Professional Wine Studies (supported by the Rudd Foundation, the Napa Valley Vintners Association, Viking Range Corporation, and Cakebread Cellars), the new home was once the Christian Brothers Still House, and when completed will be home to CIA Greystone's wine education courses and feature the nation's newest certification in professional wine studies.

The education offerings will include classes such as Tasting Terroir, Business of Wine, Food & Wine Dynamics, and Creating Innovative Professional Wine Programs for Restaurants, and will be chaired by Karen MacNeil. The new facility will house two sensory evaluation theaters, an underground temperature and humidity-controlled wine cellar, and an atrium and terrace for wine-focused functions. In addition to Greystone's professional wine courses, the Center offers two tiers of certification open to those who study at the Center and industry professionals who wish to have their wine knowledge tested through a nationally recognized certification process.
