Need more evidence that green leafy vegetables are good for you? In February, researchers at the University at Buffalo in N.Y. announced the results of a study that concluded that lutein and zeaxanthin--two fairly obscure antioxidant vitamins in the carotenoid family--have a significant positive effect on lung health. The study, which was published in the March 1 issue of the American Journal of Epidemiology, showed that participants who ate half the average amount of foods containing lutein and zeaxanthin showed a reduction in lung function equivalent to one to two years of aging. Green leafy vegetables like spinach, kale and collard greens are excellent sources of lutein and zeaxanthin.
