Lutein, the carotenoid found in dark leafy green vegetables, corn and egg yolks, has been shown to prevent macular degeneration, the most common cause of irreversible blindness in the elderly. But now researchers are saying that it may also help prevent clogging of the neck arteries.

The Los Angeles Atherosclerosis Study, led by Dr. James H. Dwyer, was conducted to assess the protective effects of lutein against early atherosclerosis. This study was done in three parts, involving humans, mice and artery cell samples. Among the findings were that individuals who had a larger intake of lutein had a smaller measure of carotid artery thickness. The researchers concluded that increased dietary intake of lutein is indeed protective against the development of early atherosclerosis, explaining why diets rich in fruits and vegetables are associated with lowered risk of heart disease.
