"No other pros that I know of can out-grill me," says 2008 202 Showdown champ David Henry. "I go through two or three propane tanks a month."

Henry, who owns a new Weber Genesis grill and a traditional 55-gallon-drum grill, offers words of wisdom when it comes to backyard barbecues this Fourth of July.

Charcoal or propane?

"I've got both. You can use charcoal when you've got all day to do the prep, but propane when time is a factor. Plus, when you've got a great propane grill, you can add a smoke box with the applewood chips and stuff like that for more flavor."

Beer or soft drinks?

"Beer. I like Samuel Adams. Whatever's in season with them."

Apron or no apron?

"No apron, I usually no shirt. Beer in one hand, tongs in the other. If I did have an apron, it would probably say 'BBQ Ninja'--I've got some skills, man!"

Biggest mistake people make when barbecuing?

"Opening the grill too many times. Unless you see a crazy flare-up or something, you should just leave your food alone for a time. If you keep checking it, you kill the temp. Also make sure to keep your grill clean. It's like your oven. If it's not clean, it's gonna reflect the heat differently and give different cooking times."

The most important thing to remember?

"Summer's here and it's time for everybody to chill out, have fun and enjoy family. That's what Independence Day is all about."
