Yummy yogurt substitutions

In its many forms and flavors, low-fat and fat-free yogurt can be enjoyed right from the cup, spooned over fruit and added to many other foods. Here are some easy, healthy substitutions to tickle your taste-buds, courtesy of www.dannon.com:

* Blend 1 teaspoon Dijon mustard with 1 cup plain yogurt, salt and pepper to taste, and use in tuna or chicken salad instead of mayonnaise. Add herbs if desired.

* For a streamlined base for soups, casseroles or cooked sauces, add 2 tablespoons all-purpose flour to each cup of plain yogurt to replace milk or cream.

* Replace the sour cream in many baked goods with plain or vanilla yogurt. You'll also need to add 1 teaspoon baking soda to dry ingredients called for in recipe.

* Instead of cream cheese, make yogurt cheese. Line a colander or large strainer with a coffee filter, and place in a large bowl. Spoon plain yogurt into lined colander. Cover and place in refrigerator; let drip 24 hours. One pint of yogurt yields about 1 cup cheese.
