Why you still want dessert

Muscle & Fitness/Hers, April, 2003 by Kristina Haar

Your meal was delicious, and the healthy appetizer, salad and main dish you ordered have left you stuffed. Then the dessert tray appears and your willpower goes out the window. How can you even think about eating one more bite? Researchers from the University of California. Davis, say flavor and texture are to blame.

First, if your meal contained lots of savory foods but not much sweetness, you'll still feel like you have room for a sweet dessert. Second, if your meal contained a number of hard rather than soft foods, you'll be inclined to desire a soft dessert, and vice versa. Try mixing flavors and textures within your meal to tune out the dessert tray's siren song.
