Tasty tofu tips - Extra Nutrition - Brief Article

Muscle & Fitness/Hers, Oct-Nov, 2002

More and more people are eating soyfoods these days, but some products are easier to use than others. A soy burger can go from microwave to plate in a matter of seconds, and it takes no time at all to pour a glass of soymilk. But what do you do with tofu--that slippery block of white soybean curd? Tofu is actually quite versatile: You can puree the silken firm variety for a smoothie, soup, dip or dressing, or use the firm variety to put on the grill or ma stir-fry. Choose a "lite" tofu to reduce your fat intake.

Using tofu in a smoothie is an easy way to introduce your tastebuds to tofu, and here's one of the best recipes we've ever tasted.

  8 oz. silken tofu
1/2 medium ripe banana
1/2 cup orange juice
1/4 cup honey
3/4 cup frozen berry medley
    (strawberries, blueberries and
    raspberries)
  1 cup ice

Blend together first five ingredients until smooth. Add ice, then continue to blend until creamy. Makes four servings. Per serving: 159 calories, 4 g protein, 32 g carbohydrate, 2 g fat, 1.5 g fiber.
