Candied sweet potatoes

Candied Sweet Potatoes. (Recipes for kids) Chef Beverly Lynn Bennets 4 lbs. sweet potatoes, washed well 1/3 c. maple syrup 1/4 c, Sucanat 3 Tbsp. Spectrum Naturals Spread or non-hydrogenated spreadable margarine
Peel and cut the sweet potatoes into large cubes. Cook sweet potato cubes in a pot of salted boiling water until tender, about 15 minutes. Drain and set aside. In the same pot, combine the remaining ingredients and cook over medium heat until Sucanat is thoroughly dissolved and the mixture starts to bubble. Return the sweet potatoes to the pot and toss with the bubbling syrup to thoroughly coat every cube. Serves 8.
