For a hearty dose of omega-3s, try this tuna burger from chef Laurent Tourondel's new Go Fish: Flesh Ideas for American Seafood. Tourondel, owner of New York City's BLT Steak restaurant, suggests topping your burger with sliced red onion, avocado, and cilantro.
2 pounds sushi-grade tuna, finely chopped
2 scallions, green part only, finely chopped
1 large shallot, minced
1 garlic clove, minced
1 1/2 teaspoons Worcestershire Sauce
1/4 cup olive oil
fine sea salt, freshly ground black pepper, and Tabasco sauce to taste
6 hamburger-style buns
1 Put tuna, scallions, shallot, garlic, Worcestershire sauce, and 2 tablespoons olive oil in a bowl and knead together. Season with salt, pepper, and Tabasco. Divide the tuna into 6 portions and form each portion into a burger.
2 Pour the remaining 2 tablespoons olive oil into a wide, heavy-bottomed saute pan, skillet, or grill pan over medium high heat Cook the burgers for 2 minutes on each side for rare, or longer for more well done.
3 Serve each burger on a bun and present with garnishes.
