Wheat vs. flour

Thank you for your article on bread labels ["The Whole Truth," June, page 20], but I've always thought the first ingredient to look for is "whole grain wheat," not "whole wheat flour." Wheat flour is also a bad guy, according the book The DHEA Breakthrough by Stephen A. Cherniske, M.D. I've read that in Chinese medicine, wheat flour is considered harmful to cardiac health, too.

The first ingredient on the label should be "100 percent whole grain wheat flour" or the first flour should be derived from 100 percent whole grains like wheat, rye, or oat.
