TO PRESERVE the healing properties of herbal medicinal teas, be sure to prepare them correctly. Most roots and barks should be simmered in boiling water in a covered pot for 15 to 20 minutes, but delicate leaves, flowers, and seeds need more gentle treatment--pour boiling water over them and steep the tea in a covered pot for 15 minutes. In both cases, covering the herb is essential to keep the healing ingredients from escaping in the steam.
