Well-known grillmaster Raichlen, author of the best-selling cookbooks BBQ USA and How to Grill, turns his attention to bringing grill flavor into the house. The first chapter describes indoor grills in detail, from contact grills to grill pans, built-in and freestanding grills, the fireplace, the countertop rotisserie, and the stovetop smoker. Raichlen then offers chapters on appetizers, beef, pork, lamb, burgers, poultry, seafood, bread and sandwiches, vegetables and sides, basics (rubs, compound butters, and sauces), and desserts. Sample recipes: Prosciutto Grilled Figs, Spit-Roasted Prime Rib, Smoked Leg of Lamb, Rosemary Salmon, Tostadas, Bacon-Grilled Corn, and Maple-Glazed Bananas.
Color photos at the front depict some of these mouthwatering treats and show the grilling technique used.
