Succulent summer vegetables - recipes

Now that we're in the midst of summer, it's easy to find fresh vegetables that can be used to create a number of tasty meals. Whether slightly cooked or raw, vegetables are a must for a well-balanced diet and better health. But, contrary to popular thought, they don't have to be tasteless. Just try some of the following recipes to prepare some flavorful and nutritious dishes, including Marinated Sweet Pepper Salad, Tomato Onion And Mozzarella Salad and Asparagus Pasta Toss.

MARINATED SWEET PEPPER SALAD

1 large green pepper
2 large red bell peppers
2 large yellow peppers
1/2 cup olive oil
2 tablespoons fresh lemon juice
2 large garlic cloves, finely chopped
2 teaspoons sugar
1 tablespoon fresh basil, cut into thin strips
  Salt and pepper to taste
