The Church Emerging From Vatican II (Twenty-Third Publications, 349 pages, $14.95 paperback) by Dennis Doyle would be my choice text for an introductory class on Catholicism, or an intro to religious studies on a Catholic campus.
The engagingly written chapters, each beginning with a contemporary story or question, chart a path through the church today, the nature and mission, symbolic character, structure, eschatological nature and more.
The author draws on his experience teaching at the University of Dayton. His ecumenical awareness adds another attractive dimension.
